As one of the exceptional restaurants at Mandapa, a Ritz-Carlton Reserve, Kubu draws inspiration from the namesake huts used by Balinese farmers to store rice after harvesting, elevating it to a whole new level into an iconic open-air bamboo structure. Around the structure stand nine private dining cocoons overlooking the gently flowing Ayung River. At the helm is the resort’s Executive Chef Bayu Retno Timur, leading the culinary team to craft inspiring and refined Mediterranean-European-inspired delights. The restaurant is open for dinner only, serving a selected à la carte menu, on top of the six- or eight-course degustation menus. Memorable signature dishes include beetroot tart, asparagus risotto, beef Wellington, and more.
